From the Pacific to the Andes.

Experience Peru

Peru’s geography, from the Pacific coast to the high Andes and the Amazon, gives it one of the most diverse pantries on earth, and Lima has become one of the world’s great food cities.

Peru’s cooking draws on Indigenous Andean traditions and on waves of Spanish, African, Chinese and Japanese influence. The results are unmistakable: bright ceviches cured in lime, Chinese-Peruvian stir-fries, and Nikkei dishes that blend Japan and Peru on the same plate.

In the Andes, the Sacred Valley is home to thousands of native potato varieties, quinoa and corn grown on ancient terraces. Farmers and young chefs are working together to bring these ingredients to new tables.

From Lima’s celebrated restaurants to a highland lunch cooked in the earth, Peru turns every meal into a story about place.

Insider tip from Richard

Have ceviche at lunch, never at dinner. It's a midday dish here, and the fish is freshest before the afternoon.
