Scotland’s cold, clean waters give it remarkable seafood: langoustines, scallops, oysters and salmon. On land, the Highlands provide venison, grouse and lamb, and the country’s smokehouses and bakeries keep old traditions alive.

Whisky is part of the landscape, from smoky island malts to gentler Speyside drams, and distillery visits are a highlight of any journey. On the Isle of Skye and along the west coast, small restaurants serve the day’s catch with sea views.

It is a place for long walks, warm fires and generous plates.

Insider tip from Richard

Book the small distillery, not the famous one. Fewer crowds, longer tastings and better stories.
